Apples baked on a bed of wafer-thin pastry, generously sprinkled with armagnac. All agree that it is delicious, but is it called a Tourtiere Landaise, or a Croustade Gasconne?
Carré d'agneau is a side of lamb chops. A carré is also 'argot' for a square-cut, bob hairstyle. This square-cut sheep is in its element on the mountain slopes.
